Menachos7: 5
One who says, ‘‘I take upon myself [to bring] a todah-offering,’’ must bring it and its bread from that which is unconsecrated. [If he said,] ‘‘A todah-offering from that which is unconsecrated and its bread from maaser,’’ he must bring its bread from that which is unconsecrated. [If he said,] ‘‘A todah-offering from maaser and its bread from that which is unconsecrated,’’ let him bring [it]. ‘‘[Both] the todah-offering, and its bread from maaser,’’ let him bring [it]. However, he may not bring from wheat of maaser sheni, only from money of maaser sheni.
Menachos7: 6
From where is it [known] that one who says, ‘‘I take upon myself [to bring] a todah-offering,’’ must bring from that which is unconsecrated? Because it is stated (Deut. 16:2): And you shall sacrifice a pesach-offering to HASHEM your God, [from the] flocks and cattle. But does not the pesach-offering come only from sheep or goats? If so, why does it say flocks and cattle? It is in order to compare all that comes from cattle and flocks to the pesach-offering. Just as the pesach-offering, which comes as an obligation, comes only from that which is unconsecrated; so anything which comes as an obligation may be brought only from that which is unconsecrated. Therefore, if one says, ‘‘I take upon myself [to bring] a todah-offering’’; [or] ‘‘I take upon myself [to bring] a shelamimoffering,’’ since they come as an obligation, they may come only from that which is unconsecrated. However, libations in all cases come only from that which is unconsecrated.
Menachos8: 1
All communal and individual offerings may come either from the Land [of Israel] or from outside the Land, either from the new [crop] or from the old, except for the omer and the shtei halechem, which may come only from the new [crop] and from the Land. All of them come only from choice [produce]. Which is choice? Michmas and Mezonichah are the preferred areas for fine flour. Chafarayim in the valley is second to them. All lands are valid, but they would bring from these.
Menachos8: 2
We do not bring either from a fertilized field, or from an irrigated field, or from a field of trees; but if one brought, it is valid. How does one do it? He plows it the first year, and in the second he plants it seventy days prior to Passover, and it produces fine flour in abundance. How does one check it? The treasurer inserts his hand into it. [If] dust comes up in it, it is unfit until he sifts it. If it becomes wormy, it is unfit.
Menachos8: 3
Tekoah is the preferred area for the oil. Abba Shaul says: Second to it is Regev beyond the Jordan. All lands are valid, but they would bring from these. We do not bring either from a fertilized field, or from an irrigated field, or from those [trees] between which vegetation grew; but if one brought, it is valid. We do not bring from unripe olives, and if one did, it is invalid. We do not bring from oliveberries which were soaked in water, nor from the preserved, nor from the stewed; if one did, it is invalid.
Menachos8: 4

There are three [categories of] olives, each with three oils. The first olive — he picks it from the top of the olive tree, and pounds and places [it] in the basket. R’ Yehudah says: Around the basket. This is the first. He presses with the beam — R’ Yehudah says: With stones — this is the second. He again grinds and presses [them]; this is the third. The first is for the menorah and the rest is for minchah-offerings. The second olive — he picks it from the rooftop and pounds and places [it] in the basket. R’ Yehudah says: Around the basket. This is the first. He presses with the beam — R’ Yehudah says: With stones — this is the second. He again grinds and presses [them]; this is the third. The first is for the menorah and the rest is for minchah-offerings. The third olive — he packs it inside the house until it decays and he takes it up and dries it atop the roof, and pounds and places [it] into the basket. R’ Yehudah says: Around the basket. This is the first. He presses with the beam — R’ Yehudah says: With stones — this is the second. He again grinds and presses [them]; this is the third. The first is for the menorah and the rest is for minchah-offerings.
Menachos8: 5
The first of the first is the most superior. The second of the first and the first of the second are equal. The third of the first, the second of the second, and the first of the third are equal. The third of the second and the second of the third are equal. The third of the third is the most inferior.
One could deduce that the minchah-offerings should also require pure olive oil; if the menorah, which is not for consumption, requires pure olive oil, surely the minchah-offerings, which are for consumption, should require pure olive oil. Therefore, Scripture teaches: pure, beaten for the light — but not pure, beaten for the minchah-offerings.
Menachos8: 6
And from where did they bring the wine? Kerusim and Hattulim are the preferred areas for wine. Second to them are Beth Rimah and Beth Lavan in the highland and Kefar Signah in the valley. All lands are valid, but they would bring from these. We do not bring either from a fertilized field, or from an irrigated field, or from those [vines] between which vegetation grew; but if one brought, it is valid. We do not bring from Elioston wine, but if one brought, it is valid. We do not bring from old [wine]; [these are] the words of Rabbi. But the Sages declare [it] fit. We do not bring either sweetened [wine], or smoked, or cooked; and if one brought, it is invalid. We do not bring from espaliers but only from trailing vines and from well-cultivated vineyards.
Menachos8: 7
They did not store it in large casks but rather in small barrels, and one does not fill the barrel to its rim so that it should be aromatic. One does not bring from its mouth because of the mold, nor from its bottom because of the sediment. Rather, one brings from the middle third and from its middle. How does he check? The treasurer sits with the reed in his hand. [When] it exuded the vein [of sediment], he struck with the reed. R’ Yose bar R’ Yehudah says: Wine in which mold developed is unfit, as it is stated (Num. 28:19-20, 31): Unblemished they shall be for you and their minchah-offerings; unblemished they shall be for you and their libations.
